The olive tree belongs to the Oleaceae family. The plant begins to bear fruit around the 3rd–4th year, full productivity begins around the 9th–10th year; maturity is reached after the age of 50. It is a very long-lived plant: in favorable climatic conditions an olive tree can live for up to a thousand years. The roots, mostly of the adventitious type, are very superficial and expanded, generally never going deeper than 60–100 cm. The trunk is cylindrical and twisted, with gray or dark gray bark, the wood is very hard and heavy. The stump forms globular structures, called ovoli, from which numerous basal shoots are released every year. The foliage has a conical shape, with pendulous or patent fruiting branches (arranged horizontally with respect to the stem) depending on the variety.
